Salsa favorita

Happy St. Patty’s Day to those of you celebrating! To those of you who use it as an excuse to drink your face off… well Happy St. Patty’s Day to you too.

This morning I had a great speed workout in some BEAUTIFUL 8 degree weather. No complaints here, people… I am loving it! Maybe I will be packing my winter gear away sooner rather than later. KNOCK ON WOOD… I don’t want to jinx anything.

The speed workout went well though.

For those of us who are aiming for a 2:45 finish in Around the Bay, we were to aim for 4:15/800m. For some reason that seemed too slow for some of us because we ended up doing them way faster

1 – I forget my time.. oops
2 – 3:30
3 – 3:24
4 – 4:02
5 – 4:00
6 – 4:06

For the last 3 intervals I was really trying to focus on slowing down… hey, if I can take it easy, I should embrace it right? Plus, I feel that it’s good to get the miles in these next two weeks but I also feel that anything we do (speed intervals, hills, etc.) from now until race day, isn’t going to make a huge difference since it’s only 9 days away. Meaning, if I can’t hold my race pace by now, there’s no hope in hell that I will be able to in 9 days (don’t worry.. i can hold my pace, that was just an example). Am I wrong about this?!

It was a good workout though and I had fun with my awesome running posse. Did I mention that it was nice out? Ok, ok.. I’ll stop :) Those of you who survived Winter will understand why it’s a big deal ;)

Last night GMan and I made my FAVORITE salsa ever. I love me some fresh salsa with whole wheat tostitos.

I won’t bore you with pictures of all the chopping but the following are the ingredients. Add more or less of either, obviously it all depends on your preference.

~ 1 avocado
~ 2 tomatos
~ lots of cilantro (add as much as you want)
~ chopped onion
~ chili peppers.
~ salt
~ freshly squeezed lime juice (I used half a lime)

Chop everything up, mix and enjoy! Normally we would use jalapeño peppers instead but we didn’t have any. Work with what you have!

I loved eating this with the whole wheat tostitos but you can eat it with anything really…on crackers, toasted baguette (think bruschetta), salad … anything! Just looking at the picture makes me want more..

    That looks like a cool race. I can’t believe how old it is. In the race photo gallery, there are pictures from 1896. After looking at those pictures, I’m so thankful for modern running gear!

    8 degrees…yikes. I’m such a weather wimp. 50 degrees makes me head for a treadmill instead of outside…seriously. So pathetic.

    That salsa looks so FRESH and chunky — I love that its not swimming in liquid. That’s my style. Can’t wait til tomatoes start popping up at the farmers markets.
